چکیده

The objective of this study was to investigate the effects of seasonal environment, transport conditions, and time in lairage on pork quality and serum cortisol concentrations. Market hogs were slaughtered during winter (n = 535), spring (n = 645), summer (n = 644), and fall (n = 488). Within season, hogs were randomly assigned to treatments in a 2 × 2 × 2 factorial arrangement, with 2 deck locations (top vs. bottom) and 2 transport and lairage durations (3 h vs. 6 h). Blood samples were collected at exsanguination for analysis of cortisol concentration. Loins were collected at 24 h postmortem for pork quality assessment. Season and deck did not have a main effect on cortisol concentrations or pork quality. Hogs transported 6 h had increased cortisol concentrations (103.0 vs. 95.5 ng/mL; P < 0.001) and decreased L* (52.49 vs. 52.69; P = 0.09), b* (6.28 vs. 6.36; P = 0.03), and hue angle (20.70 vs. 20.95; P = 0.03) compared to hogs transported 3 h. Hogs subjected to 6 h of lairage had increased 24-h pH (5.69 vs. 5.66; P = 0.005), a* (16.64 vs. 16.48; P < 0.0001), b* (6.42 vs. 6.22; P < 0.0001), saturation (17.85 vs. 17.64; P < 0.0001), and hue angle (21.01 vs. 20.65; P = 0.002) and decreased L* (52.49 vs. 52.69; P = 0.07) when compared to hogs subjected to 3 h of lairage.

The Effect of Maternal Anemia and Umbilical Cord Cortisol Level on Birth Weight and Length

Background & Aims: Maternal anemia in pregnancy is a considerable risk factor for both mother and fetus. Growth retardation, intra uterine fetal death, maternal cardiovascular symptoms and reduction in blood supply are among outcomes of maternal anemia. Since there are different reports about the relationship between low maternal hemoglobin level and low birght weight, the precent study was des...

Preslaughter handling effects on pork quality and glycolytic potential in two muscles differing in fiber type composition.

The objective of the present experiment was to investigate the effects of transportation, lairage, and preslaughter stressor treatment on glycolytic potential and pork quality of the glycolytic longissimus and the oxidative supraspinatus (SSP) or serratus ventralis (SV) muscles. In a 2 x 2 x 2 factorial design, 384 pigs were assigned randomly either to short (50 min) and smooth or long (3 h) an...

Meat Science and Muscle Biology Symposium: Impact of Pre- and Post-Slaughter Handling on Meat Quality

Market weight pigs are subjected to numerous stressors during the marketing process from loading at the farm to stunning at the packing plant. These stressors have important implications for animal well-being and fresh pork quality traits. The objectives of this presentation are to review: 1) pre-harvest stressors in pigs; 2) common measures of stress during handling and transportation; and 3) ...

Slaughter value, meat quality, creatine kinase activity and cortisol levels in the blood serum of growing-finishing pigs slaughtered immediately after transport and after a rest period.

The experimental materials comprised 44 hybrid [female (Polish Large White x Polish Landrace) x male Duroc] growing-finishing pigs. The animals were randomly divided into two groups: 24 pigs were slaughtered immediately after transport and 20 pigs were slaughtered after a 24-hour rest period in the lairage. The meat content of pork carcasses, carcass dressing percentage, the proximate chemical ...

Effect of rearing system and mixing at loading on transport and lairage behaviour and meat quality: comparison of free range and conventionally raised pigs.

Free range pigs, born outdoors and reared after weaning in enriched indoor accommodation, were compared with conventionally raised pigs from a farm, matched for effects on meat quality, with respect to behaviour during transport and lairage, blood chemistry at slaughter and meat quality characteristics. Pigs were either kept in farm pen groups or were mixed at loading and kept in the groups, so...
